I have questions about the sentence structure.

How are you? I am a Korean girl learning English.
I would like to ask a question about the sentence structure.

Please see the below sentence and especially the underlined part.

The solar panels manufactured by Gantt are almost identical to the ones made by Solaria, the only difference being the price.

What if I make original phrase ommitted, ", but the only difference is the price" is right?

I don't think the price is part of the identity. If the only difference is the price, then the panels are identical. So, I'd leave out 'almost'.
No, you can't use 'but'. You can say, "... Solaria; the only difference is the price" or "... Solaria. The only difference is the price."
Here the 'difference' you are referring to is not between the products themselves, but relates to the commercial transaction involved in buying (or selling) one.
