such ... as/who/that

1.Such food as they gave us was scarcely fit to eat.
2.Such individuals who take up this role often find life frustrating.


For sentence 1, can "as" be replaced by "that"? And for sentence 2, can "who" be replaced by "as" or "that"?
Do these words in fact lead an attributive clause? Thanks for help.

I don't find either of your sentences natural.

1. The food they gave us....
2. Those individuals who....

But these sentences are from the dictionary. And I want to learn something about the use of "such...as".

I am not a teacher.

These two sentences sound literary and a little old fashioned, especially 2.

1. is the more natural sounding of the two; "such food as..." meaning something like, "what little food there was".
It could also mean "for what it was worth", or "if you could call what they gave us food".
