    I'm having dinner from 6-7PM

    Would a native speaker saying something like - I'm having dinner from 6 to 7pm.

    Yes.
    I probably wouldn't use "pm" - if it's dinner and the hour is 6, you can safely assume it's pm
    I'm not a teacher, but I write for a living. Please don't ask me about 2nd conditionals, but I'm a safe bet for what reads well in (American) English.
