    don't want to be/ should not be

    You don't want to be so far away from your patient that you can't hear them.

    You shouldn't be so far away from your patient that you can't hear them.

    What is the difference in meaning of both sentences?

    The meaning of both is really the same: don't be so far away that you can't hear them. But the second one is one is more direct, and which one might be more suitable depends on the details of the situation, which we don't know.
