Could you please let me know what "I am so over this woman" means?

It would have been helpful if you had given us the context in which you read or heard this sentence.

It might mean 'I am no longer in love with this woman.'

In that sentence, "so" acts as an intensifier. He is not just "over that woman", he is "so over over that woman".

An added note: since about 2000, AmE uses "so" to add emphasis to any locution whatsoever, whereas it used to be restricted to modifying adjectives when used for that purpose.

And in slang, the intensity of the intensifier is sometimes reflected by the number of o's.

I am soooo over that woman.

I'd be suspicious that anyone who said they were "sooo over that woman" still had issues with her.

The person is saying that the woman no longer affects him emotionally at all. Presumably, he was in a relationship with her and was upset when it ended and now want the listener to know that this is no longer the case. Whether it's true or not is debatable.
