Looking to buy a watch, but the straps are not the one I want. I say:

What I can/could do is switch the straps from watch A to watch B. This way I can have both the watch and strap that I want.

    Are both useable?

    Both are acceptable.
'Swap' would be a better word than 'switch'.

I would use "swap/switch the strap from watch A to watch B". Watch A has only one strap. If you want to use the plural, say something like "I could take the straps from watch A and watch B and swap them over".
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.

Why would you say could instead of can here?

It's a matter of personal choice. As tedmc said 'Both are acceptable'.
