    There are three different types of sauces for the hotdog. I'm making a phone order and I say:

    Can you include more of the sauce?

    VS

    Can you include more of the sauces?

    Are both okay?

    If there are three sauces, I would use "sauces".

    If there are three different sauces, you should specify which one(s) you want. "Could you give me extra mustard, please?"
    If you say "Can you include extra sauces?" it implies that you want more of each type of sauce. If you say "extra sauce", the person taking the order will inquire "Which type?"
