    Can I use sharps for saying the sunlight is sharping my eyes?

    No. In current usage "sharp" can be a verb only in regard to music. You can say "it hurts my eyes."

    I would describe the sun as 'glaring' instead of 'shining'.

    If something irritates your eyes (which I don't think I'd say, come to think of it) it's a foreign body -a bit of grit or something.
