Hello,
Can anybody explain to me what the phrase eyes grow skinny means in the context below?
"I was just wondering," I said, "How well do you know Mrs. Courington across the street?"
"Well enough," he said, wiping his greasy hands on his jeans.
"Do you know what happened to her daughter?"
"She's dead."
"I know. But how did she die?"
The guy's eyes grew skinny.
"What business is it of yours, peckerwood?"
"I'm sorry?"

I'm not a teacher, but I write for a living. Please don't ask me about 2nd conditionals, but I'm a safe bet for what reads well in (American) English.
To me, it means that his eyes narrowed as a sign of anger making the visible parts of his eyeballs thinner, or "skinny".

I agree with Barb that it's suspicion and/or mistrust, rather than anger (which is expressed by other things, even wide eyes).
It could be suspicion and/or mistrust but, as some of the pictures Eckaslike linked us to show, narrowed eyes can be a sign of anger.
I agree, I think you would need to know more about the context.
Wide-eyed anger to me implies someone who is wild with anger, not just angry.
Unfortunately, I know that people's eyes can "scrunch" with anger as I've been in several situations to experience it first hand, such as the time I was walking along a road when some random man jumped out of a car and started waving a bottle in my face. I must just have one of those faces people want to punch!![]()
