Have you looked up "call" and "say" in a dictionary?

You are asking him for the name of the object.

    'What would you call this?'
'What would you say this is?'
'This is a पेंसिल. What do you call it in English?'

Similarly, 'call' should be used instead of 'say' in 'What should I call you?'.
