I would say "We're going to a barbecue tomorrow" or "We are going to barbecue tomorrow".

In BrE, we rarely use "to barbecue" as a verb in its own right.

We're going to a barbecue tomorrow = We will attend a barbecue somewhere other than at our own house.
We're going to have a barbecue tomorrow = We will cook food on an outdoor grill, probably at our own house, tomorrow.

We do use "barbecue" as a verb before specific types of food, or before a pronoun for a previously mentioned food.

What are you doing for dinner tonight?
I thought I'd barbecue some ribs.

How are you going to cook the kebabs?
We're going to barbecue them.

We use it on its own when the method has been chosen, but the menu has not been.

It's common in AmE just to say "We're barbecuing tomorrow", as a synonym for "We're having a cookout".

Barbecue technically is a method in and of itself, meaning to cook at low temperatures for long times, often while simultaneously smoking the food. There is a wide range of styles and methods, which vary mainly by region, and sub-styles even with regions, and a never-ending debate on the merits of the various styles, techniques, etc.

However, we often (in the US anyway) say 'barbecue' when we really should be saying 'grilling', which involves much quicker cooking at higher temperatures over direct heat. There typically isn't much smoke involved with grilling, at least not as part of the actual cooking process.

In the UK, it's called "a barbecue". The grill is in the kitchen.
