"They would like to watch or see you do the horse riding"?"They liked watch or see you do the horse riding"?Please check if these are correct and could you please tell whether "watch" can be used in reference to humans or not?

We don't say "do the horse riding". Either "watch" or "see" work in the following:

They would like to watch you ride a horse.
They would like to see you ride a horse.

Why do you think we can't use "watch" when referring to humans?

Okay we can either say see or watch both can be used. I thought that we could only use see in reference to humans because watch is especially used in reference to something that we see and its moving like a movie on T.V that's why I was confused because if somebody rides a horse, horse moves.

The word "watch" has nothing to do with whether the subject is moving or not. I can watch paint dry. I can watch a person sitting motionless on a beach for several hours. (Generally, I have better things to do with my time!)
