I am driving a taxi and I would like to be as polite as possible.

Would it be fine when the passenger is leaving the taxi, I say

1) Thank you. Have a nice day.
2) Thank you. Have a good day.
3) Thank you. Enjoy your day.

Is any of the above correct?

I guess have a nice day is the most common?

Any other suggestion to make me feel more polite?

(Add info: I saw some people seems to discourage the use of have a good/nice day at http://english.stackexchange.com/questions/134511/when-can-i-use-have-a-good-day )

All three options are correct, appropriate, and widely used. They're equally acceptable.

Those are just a few isolated opinions, and there is absolutely nothing wrong with saying any of them. I honestly don't understand their objection to them.

You of course might want to replace 'day' with 'night' or 'evening', depending on the time of day.

Yes, until it starts to get dark. Then you'd have to switch to 'evening' or 'night'.

If you've been chatting to your passenger and they've told you that they're doing something nice (going to the cinema, going on holiday, etc), you could mention that when they get out of the taxi.

It would be odd to say "have a nice day" or "enjoy you day" if it is late at night.
I agree it is even better to "tailor" your greeting to the conversation you have with your passenger(if you do have it).

Maybe it is a BrE thing, but I think 1) is the best.
