    For all university courses, 30 students registered for CAD course, while the other 27 students registered for Photography courses.

    If there are 57 students in total registered for two courses , is it correct to say "the other 27 students" to refer to the remaining ones (the rest) of the total?

    ​Yes.
    I would delete the phrase "For all university courses." It's confusing, and it's not needed.
    I'm not a teacher. I speak American English. I've tutored writing at the University of Southern Maine and have done a good deal of copy editing and writing, occasionally for publication.
