    Is the following question grammatically correct?

    But don't we finished that project?"

    I would use 'haven't' instead of 'don't'.

    You could write Don't we finish the project? as a grammatically correct but unnatural sentence. Didn't we finish the project? is both grammatical and natural, as is Matthew Wai's suggestion, Haven't we finished​ the project?

    There are other possibilities that could work, but the original one doesn't:

    But don't we have to finish the project?
    But shouldn't we have finished the project?

    etc.

    Do/does + -ed doesn't work.
