    You can use many only with countable nouns: I haven't seen you many times since last December. Use much with uncountable nouns: I'm sorry this message is so short. I don't have much time to write.

    As you can see from my examples, "time" can be countable or uncountable. It's countable when it means instance or occurrence. It's uncountable when it means a period or interval.

    You might guess from what I've written that you could say It's been much time since I last saw you. Although that's grammatical, it isn't natural.

    Much time has passed since I last saw you.

    I found examples of 'much time has passed' on FRAZE·IT, so it might be acceptable.

    Your sentence is correct, Matthew, but not very natural. We tend to use 'much time' in (near-)negative utterances and/or after so, how and ​too.
