How to address a professor at university in an e-mail?

If the academic title of a lecturer is Prof. Dr. John Smith, what would be the most appropriate way to address him in an e-mail?

Re: How to address a professor at university in an e-mail?

In British universities, only one academic title is used. Professor John Smith Ba, MA, PhD is addressed as Professor Smith

If you don't know him, Dear Professor Smith.

If you know him, Dear John.
