    how is it going?

If you are interested in someone, could you ask the following?

-I want to know how it's going with you?
-How is everything going (with you)?

    Would a response be:

-It is going very good with me.

All of this sounds a bit odd to me.

    Re: how is it going?

The phrase "to be interested in someone" generally means, in BrE, that you like them in a potentially romantic way and are interested in having a relationship with them.

A slightly more casual version would be "How's it going?" and the response would be "Great, thanks. How are you?"

Yours are OK but they're rather formal.
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.

Thank you. Still, could you also reply with: "With me it's fine."?
