And I wish I could do that what you do. Even with correct capitalization, it's a fragment. However, you might well hear it in a conversation.

And I wish I could do that university stuff you do. Again, even with the corrected capitalization, it's a fragment. It would only work colloquially in a very specific conversation where both speakers knew what "university stuff" means.
See above. Remember to always capitalize the pronoun 'I'.

Re: Are the below sentences correct ?

The second is incorrect even with capitalisation, and even as a fragment. You need to remove "that", as shown below.

And I wish I could do that what you do.
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.

Re: Are the below sentences correct ?

The second one will work when you put which in place of what:
I wish I could do that which you do.

But that's not a thing you'd ever hear spoken in the street. In various textbooks, however, you can definitely find things like that.

Re: Are the below sentences correct ?

The edited versions of 1 and 3 in post #1 are now correct. 2 still has an extra "that". Please don't edit post #1 again though. It gets very confusing when people comment or respond to a post and it's then edited. Please write a new post in reply to this one, giving your three revised sentences.
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.
