How can I start an email to a professor?

I have always started my emails to my professor like this:

Dear Professor ....,

This one sounds a little overused to me. I was wondering if there is another option which is formal and polite.

My professor starts with "Dear Hamidreza" and "Hi Hamidreza".

There's nothing wrong with your salutation. If they reply in a friendly manner, that's fine, but I would stick to being polite and respectful in my replies.

How does your professor sign off his/her emails? If he/she ends with something like "Regards, Professor Smith", I would continue to address him/her as such. However, if he/she signs off with "Regards, Peter/Jane", I would take that as a sign that it's OK to address him/her by his/her first name.
