    Please check if they're all correct and natural.

    1 The number/amount of mass shootings has gone through the roof in/during/over the past 8 years.

    2 The number/amount of mass shootings has skyrocketed in/during/over the past 8 years.

    3 The number/amount of mass shootings has been skyrocketing in/during/over the past 8 years.

    Shootings are countable. Therefore number is correct and amount is not. The prepositions are all interchangeable here. In and over seem more natural to me than during, but I would still accept during as correct.
