The first thing we did was go out in the streets and talk to the people.

Is "go" correct or should it be "going"?

I'm happy with the original sentence as is. I'd probably say into the streets.

Why can't say "on" the street?

The choice of preposition is governed more by practice than theory. On just isn't natural in the proposed sentence.
