Technology far more sophisticated than the spindle and hand-loom would change

Technology far more sophisticated than the spindle and hand-loom would change all that.

Taken from an IELTS reading exercise.

'far more sophisticated than the spindle and hand-loom' is an adjective.(I guess I am right)

Technology which(or that) is far more sophisticated than the spindle and hand-loom would change all that.

Why they are not using 'which is' or 'that is' like in above sentence in the original one?

We can often omit the relative pronoun and the verb BE in such reduced relative clauses.

Rock-onn, please ensure your posts are in a font size that's large enough to read. If you are cutting and pasting, before you post, highlight the entire text and click "Remove Formatting" (the second button on the top row; it looks like two capital As with a red cross). That will put your entire post in the default font and font size.
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.
