    What an ideal world it would be ...?

    What an ideal world it would be (when/if?) all services we provide/offer for others (expecting nothing in return) is just to receive an optional thank?

    Please make it better English.

    How wonderful it would be if all we expected in return for our services was a humble thank you.

    Yes. "Will be" goes with "when," and "would be" goes with "if."
    I'm not a teacher. I speak American English. I've tutored writing at the University of Southern Maine and have done a good deal of copy editing and writing, occasionally for publication.

    Teechar's example is good. This is another way to say it.

    Your use of "optional" is incorrect. You're right that it means "not required," but we would not use it in this context.
