    Gandhi is a man with honesty.

    If you're referring to a person who is no longer alive, use "was".

    Gandhi was an honest man.

    I think 'of' can be used in 'a man of high calibre'──quoted from http://www.thefreedictionary.com/calibre.

    Yes, it can.
    ... a man of integrity
    ... a women of great virtue
    ... a thing of beauty

    However, it's more natural to say "an honest man" than "a man of honesty."
