    Plural or Singular

A well-known joke is that a mushroom goes to a bar and the bartender tells him to leave. The mushroom exclaims "Why? I'm a fungi (fun guy)!".

Is this grammatically correct? It's similar to saying "I'm a people". I think that "I'm a fungus" would be correct. However, what about ethnic groups? "I'm an Inuit". That seems grammatically correct. Would anyone like to expound on this?

It would, but there would then be no joke.
