This work is as hard as that (one)

I'm struggling with the sentence This work is as hard as that (one). I can't make out what I'm doing wrong, but I don't like either variant (neither the one with one nor the one without one).
If I were a native speaker of English, I would never shut up. :-)

Work is not normally a countable noun, so one is possible only if you're talking about countable works such as musical compositions. We often express comparisons like this by repeating the verb: This work/job is as difficult as that is.
    I am not a teacher.

I didn't know about it before, and it is so enjoyable to know such new rule in English.

Can I give these examples about this rule, and do we always have to have "that" in this type of sentence to use this rule?

Today's traffic is twice as much as the last day’s was.

This traffic is twice as much as that day was.

This homework is not as easy as that was.

Thanks Rover_KE for your response and correcting me. I appreciate it. I used "as much as" wrongly. I rewrite it:

There is twice as much traffic as there was yesterday.
    English is my great passion.
