    I am wondering if my sentence is grammatically correct.

    As a punishment for bad behaviour, David had been ordered by his teacher to clean and polish red quarry tiles in the long corridor.

    Add the definite article before "red quarry tiles". If he was told to polish only some of them, you'll have to make that clear.
    Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.

    Actually, I meant to say that he had to polish all the tiles, because the whole floor was made of them.
    Should I maybe write:
    "...to clean and polish red quarry tiles of the long corridor"?

    consider "... to clean and polish all the red marble* floor tiles of the long corridor".
    *: You can alternatively use "stone", "porcelain", etc. I presume that's why "quarry" was in the original.

    Without the article, we understand that the assignment was to find some tiles and polish them in the hallway. Maybe the teacher had left a box of them out there, or maybe the student was supposed to go to a building supply store and buy them; the sentence doesn't tell us.

    The teacher would have used the definite article if the tiles covering the floor were the intended target, answering the question "which tiles?" with "the ones on the floor of the hall."

    You don't need to include the word "all". You can just use "the" and the reader will assume it means all the tiles.
    Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.
