    Hi,

Number 1 and number 5 both need the definite article, as you have in sentences 2 and 6, which are correct. The other sentences (3, 4 and 7) are fine as well.

    2. I would like to talk about the color pink.
    3. Pink is my favourite color and I would like to talk about it.
    4. I would like to talk about pink, which is my favourite color.
    5. The pink color represents...
    6. The color pink represents...
    7. Things which are pink in color represent...

I thought when we used colour name before the word "color" we didn't need the article "the". For example, Pink color.

Does the following analysis OK? Because "the color pink" sounds ambiguous.
I would like to talk about the color (which is) pink.

I don't think there is any difference between "the pink color" and "the color pink" phrases.

Factually, I am not sure about #7. Do all things that are pink represent the same thing?

5, 6 and 7 are not sentences: they are incomplete.

I think the punctuation shows that.

They could do in context. "Look at the map. Pink represents countries in the British Commonwealth, ..."

Indeed they could, but often they wouldn't. I struggle to see how cherry blossom, smoked salmon and bubble gum make it as one.
