    Both sides have to be equally and properly grilled.

    Now, it is time to grill the steaks on the barbecue. I am also good at broiling them under medium heat. The secret is to turn them over occasionally and with great care. Both sides have to be equally and properly grilled.

    Can we replace the bold part with "Both sides need grilling equally and properly" ?

    It's grammatical and makes sense but isn't natural.

    Barbecue​ is also a verb, so the first sentence can also just say "Now it's time to barbecue the steaks."

    American barbecue enthusiasts cringe at the sentence's use of the word. To them, barbecuing is the art of slow-cooking meat (usually) in a flame-heated, smoky oven, often outdoors, at low temperatures. The thing you cook steaks on is a grill.
