    much + plural noun?

That’s why being exposed to so much stimuli causes stress that they’re incapable of tolerating.

'stimuli' is the plural form of 'stimulus'

an adjective 'much' can be placed before a non-countable noun

    'much stimuli' is correct ?

Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.

    Re: much + plural noun?

It sounds odd to me, but some nouns that are plural in the original language end up being used commonly as singular - like data. I don't think stimuli has reached that point yet.
