to eat fish from a man's hand

We saw the dolphins. They swam round the pool and jumped out of the water to eat fish from a man's hand.

I wonder if the “fish from a man’s hand” means “fish thrown into the air from a man’s hand”.

It doesn't. It means to take the fish directly from his hand.

I wonder if "to eat fish in a man's hand" is also OK in that context.

That implies that the man's hand was large enough to contain the dolphin and the fish! Hmm, perhaps in Gulliver's Travels.
