Hello.

How common is it to use "white-cap" to describe waves? Is this sentence correct and natural?

Massive whitecap waves were crashing on the jagged rocks.

If that doesn't work, what is another word to describe a wave which is white on top?

Whitecap is a noun. If you want an adjective, use white-capped. Either is fine.

Whitecaps are also often described as foamy or frothy.
