1) As a child he used to play with girl toys like beads, jewelry and those kinds of things/ that kind of thing.
I wonder if it's possible to 'things like that/stuff like that' here?

Although many speakers might naturally use those kinds of things, I wouldn't use it and I'd encourage you not to use it.

I wouldn't encourage you to use either phrase to mean 'for example', which apparently is what you mean to say here.And, for different kinds of things we say things like that/ stuff like that. For example:

Are you talking about sentences such as "I like bread and things like that"? "Bread" is singular (uncountable, so obviously singular) and "things" is plural. That's because the sentence could be read as "I like bread and I also like other things that are like bread".
Remember - if you don't use correct capitalisation, punctuation and spacing, anything you write will be incorrect.

1) As a game and a fitness enthusiast I'd prefer gaming consoles, video games, gym wears and those kinds of things. (since the things mentioned belong to different groups.)
2) As a traveler I like wearing camping pants, shirts, hats and things like that/stuff like that/that kind of things.
