We don't use "lawn" for the grass on a riverbank. A lawn is specifically a well-kept area of grass in a private garden.

Should I say grass or turf?

We sat on a gentle slope on the riverbank covered in unkempt grass.

How about "a gently sloping riverbank"? It saves words.

1. We sat on a gentle slope on the riverbank covered in unkempt grass.

2. We sat on a gently sloping riverbank covered in unkempt grass.

Also, is there another verb more appropriate than "cover" that I can use?

We can assume that it's sloping. If it weren't, it would be in the river. And we can assume the slope is gentle, otherwise it wouldn't be grassy and we couldn't sit on it.

So I'd just say: We sat on a grassy riverbank.

Alpa, I had never heard of unkempt grass before. Besides, the grass in that picture is short. So it must have been mowed recently.
