    a couple of

After "a couple of" do we use plural countable nouns?

Can extremely be used alone or after it we need another adj. or adv.?
    Thanks

Sure. A couple of chairs. A couple of apples. A couple of cups.

It has to be used with another adjective or adverb. Extremely wet. Extremely dry. Extremely windy. Extremely hot. Extremely cold.

I agree with Ron, but would add that the word is sometimes used as a reinforcer, with no following adjective (because the preceding adjective is implicit):

It was very wet - extremely.
