    Dear teacher

    I'd like to ask about #1.
    #1 An honest man would not say so.

    Can I use " an honest person " like #2 instead of " an honest man" without changing the meaning?
    #2 An honest person would not say so.

    Yes, you can. Some prefer 'person' where the gender is unknown or unimportant, others use 'man'.
