I'm not sure where the idea of 'deception' comes from. The image comes from some sport involving a ball (cricket or baseball, probably). When the batsman/ batter hits the ball, a member of the opposite team fields it; that is he stops it from going any further, or catches it directly, and deals with it appropriately.

A person fielding a question does the same; stops it from going any further (say onto a blog, or into the rumour-mill), and deals with it appropriately. (I suppose this is where the 'deception' idea comes from; in some cases it might be appropriate for someone to deal with a question deceitfully. But a question can be fielded without any hint of deception.)
