I have a doute about a word in plural

I know that the singular words that finish in f make their plural in -ves, p.e. knife knives, wolf wolves, leaf leaves. and then, why the pro-hockey team of Toronto is named Maple LEAFS

Proper nouns are not subject to the same spelling guidelines as their common noun counterparts. If you create a proper noun, then you also create its spellings.
