    This is kind of confusing...

    What does the following sentence mean?

    " We open late during the winter. "

    maybe it means We open until late in the winter or We open at a later time in the winter.

    In winter it's usually very cold at morning. I think it means to open at 9 instead of 8 or sth like that.
    "I do use it in my everyday language".

    I agree - it can be confusing. It could be either that the shop opens later in the morning because it is dark until about 9.30 am; or that it stay open later in the evening.

    To be sure which is correct, a fuller context is needed.
