what do you do with car brand names?
ex: ford mustang
would you underline or put quotation marks?

First of all, as ford and mustang are propper nouns, they should be capitalised.

Ex: Ford Mustang

Personally, I wouldn't underline it, but sometimes I might consider putting it in inverted commas... 'Ford Mustang'.

Normally though, capitalising the first letters would be enough to tell the reader that Ford Mustang is a brand name.

There's no need to anything with names of cars. Titles of books and films, etc, are usually either underlined or italicised.
