    learnings, remained, but

you cast your imagination back perhaps 800 years, you will discover a Europe in which the influence of the Roman Empire had been forgotten, as hordes better equipped militarily coming from the East had all but dismantled the Empire. (The learnings, by the way, remained, but were passed on primarily only in the Arabian world for several more Centuries.)

    I wonder which learnings?

and why `but' is used here?

    Re: learnings, remained, but

"learnings" - the knowledge of the great Greek and Roman scientists and philosophers.

Classical knowledge survived within the writings of Arab scholars. It was lost in Western Europe where the invaders burned or otherwise destroyed the libraries.

Just to answer user-gary's question directly, Anglika's second and third sentences explain the "but". The learnings were 'lost in Western Europe where the invaders burned or otherwise destroyed the libraries' but 'classical knowledge survived within the writings of Arab scholars'.
