    Is sentence correct?

    We shouldn't eat the chicken in order to avoid being infected with bird flu.

    Is the above sentence correct?

    I doubt if "the" should be used before "chicken". The rest is fine, if you ask me.

    we shouldn't eat the chicken lest we might get (infected with) the bird flu.

    If it is one specific chicken, then yes. However, as a general instruction, then "We shouldn't eat chicken..."

    Also, "to avoid catching/picking up/getting bird flu" is more usual. Alternative ways of saying this include "avoid infection by bird flu" and "avoid possible infection with bird flu" - you have lots of options here

    Is 'by' the correct preposition after 'infected'. In other words. "... infected by bird flu"?

    It is a preposition that can be used. In this case, there is not a rigidly "correct" one.
