    He is taking his A-level exams this year. OR He is taking his A-level exam this year.

    He is taking his A-levels this year.

    It is not normal to add "exam" - it is a given that these are examinations.

    If you need to use the word, singular or plural will depend on whether he is taking one subject or more than one subject.
