    off school hours

How can this sentence be made better?
"I will give you the note book after the bell rings."
What do you call for the period of time after the last period in the school?

When I was in school the last class ended at four o'clock. So we used to say "See you after four." or "See you after classes" but this is simple speaking English.

Your sentence is fine except of course that you are not specific with the time. The bell would ring after each class is over.

    Perhaps this is better.

"I will give you the notebook after the last class."

Actually the period after the last class is usually "detention" if you were naughty. I don't think you mean that though.
