    Is it incorrect to use the word practicing as a verb when referring to Doctors practicing in a particular field?
    practising with an s in this context would suggest to me practising to get it right?

    Doctors practicing in a particular field is perfectly correct. With the "s" it would also be correct. For the verb (including the -ing form of the verb) the Brisish spell it with an "s" and the Americans with a "c".

    (For the noun, I think only the "c" form is correct.)
