This = demonstrative pronoun - singular

e.g. This is the first time I have done my homework.
    This is my friend, Ann.

These = demonstrative pronoun - plural

    e.g. These are my friends.

This and these can be used as demonstative adjectives as well:

e.g. This book is mine. - singular[ the demonstrative adjective this modifies the noun book]

These books are mine. - plural [ the demonstrative adjective these modifies the noun books]
