    Can someone please tell me which one is correct?

    Please tell me what their expectations are. - or - Please tell me what are their expectations.

    People know what is Salsa. -or - People know what Salsa is.

    (not a professional teacher) I would say either

    Please tell me what their expectations are. - or -

    Please tell me - what are their expectations?

    - or -
    Please tell me: What are their expectations?
    The latter two would be attempts to record in writing a spoken conversation. In the interests of writing well, the first option would likely be preferable, but if it was casual or informal writing, the others might be OK.

    As for the second set, as a quasi-literate native speaker I would say that there is only one possible answer:
    People know what Salsa is
