When someone says: "I'd turn to salt."
It means like go back to a sad moment of life... I don't know... But what does it really mean?

I took it to mean, (using your reference 'When someone says: "I'd turn to salt."', that he is referring to some action, behaviour, or possibly saying something that would be so bad, God would punish him, as He punished Lot's wife, by turning him into (a pillar of) salt.
This expression was used on a news programme about a Hunky Jesus Contest held by the gay community, and a religious commentator, condemning these blasphemous homosexuals (but in muted terms), was asked pointedly, "Wouldn't you really like to see them all turn into salt?"
