sew a man's ear back on, bitten off

Surgeons have managed to sew a man's ear back on after it was bitten off in a fight.

Please explain the emboldened parts to me.

The surgeons managed to sew a man's ear back on to his head, after someone had bitten it off in a fight. Verb 'to bite', 'bite, bit, bitten.'

Thanks a lot. I understood the meaning of the sentence.
But I couldn't understand what "off" means in the sentence. Could you explain it to me?

Someone bit through his ear until it came off of his head. (Yikes!)
